Homemade Tomato Paste: Delicious!
Ingredients: 4lbs of overripe tomatoes, peeled; 1 sweet red bell, seeded; 1-2T of sea salt.
{I plan on using mine for homemade ketchup so these are all the ingredients I used}
Preparation: Process tomatoes and bell pepper in a food mill, processor, or blender until well pulped.
Transfer to a pot and bring to a boil for 2-3 minutes.
Place mixture in a piece of cheese cloth, and using a strainer, suspend it over a bowl.  Leave it to drain for 12 hours in the refrigerator to remove all excess liquid.
Transfer mixture to a glass or ceramic baking dish and stir in salt.  Allow to come to room temperature then dry in a lukewarm oven for 12-20 minutes. 
Spoon into sterilized glass jar.  Take care to avoid creating air pockets, and top with 1/4 inch of EVOO (extra virgin olive oil) for storing. I will skip this step because I want to turn mine into ketchup!  The ketchup recipe will follow shortly!
I love investing time into homemade foods.  There is little that is more rewarding when you know what you are putting into your body and that it is at its freshest!
